Moonlighting as a Domestic Goddess

Spinach Linguine with Crabmeat and Capers

This dish is super easy to put together.  It’s good enough for guests.  If you are not a seafood fan, you can substitute chicken.

Ham Pea and Risotto Soup

This is NOT your average pea soup.  It’s not even green.  It’s easy and packs a lot of flavor.

Lemon Curd

This is way easier than it seems.  The only item you may not have is a double boiler, but other than that the ingredients are probably in your fridge right now.  It makes a great end of year teacher’s gift too.

Mexican Casserole

This is great to make ahead for a busy evening.  Take note though, it bakes for one hour.

Dinner Emergency

This is a fast solution to dinner.  Let me give a shout out to my friend Tonja because sometimes we had so much fun during the day that we forgot our family might want to eat dinner.

Caramel Pork Tenderloin with Napa Cabbage

This is a fantastic meal.  It smells grea when you make it and it’s a showstopper for guests.

Pork Ragu

This is a great meal to make on a lazy afternoon.  It takes a while, but the reward is that it reheats wonderfully, and you can get a few meals out of it.
